It was recently brought to my attention that we don't have a snickerdoodle recipe here. Well, since these are one of my favorite kinds of cookies, I better get posting. I have tried lots of snickerdoodles and these are the best. They are so light and buttery and the cream of tartar gives it that little tang that I adore. Love 'em.Snickerdoodles

3 cups all purpose flour
2 teaspoons cream of tarter
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups granulated sugar
1 cup butter, softened
2 eggs
1/4 cup sugar
2 teaspoons ground cinnamon
1. In a medium bowl, whisk together the flour, cream of tarter, baking soda and salt. Set aside.
2. Using a mixer, cream the sugar and butter until light and fluffy. Add in eggs. Slowly add the flour mixture and mix until well incorporated.
3. Mix together the 1/4 cup sugar and cinnamon. Shape in to 1 1/2 inch balls and dip in the cinnamon-sugar mixture. Place on a baking sheet lined with parchment paper and bake at 350 degrees for about 10-12 minutes. Do not over bake or they will be too crispy. Bake just until light and golden.
