Coconut Curry Chicken Meatball Soup

 This is SOOOO good. I used ground turkey, not chicken because I like the flavor and texture of turkey more. I also used regular potatoes, not sweet potatoes because my kids don't like sweet potatoes.

Instructions

  • 1. In a bowl, combine the chicken, 1 shallot, 1 tablespoon ginger, soy sauce, and a pinch of pepper, Coat your hands with a bit of oil, and roll the meat into tablespoon-size balls (will make 15-16 meatballs).
    2. Heat the olive oil over medium heat in a medium pot. Add the meatballs and sear until crisp, about 4-5 minutes, turning them 2-3 times. Transfer to a plate.
    3. To the same pot, add the curry paste, curry powder, 1 shallot, 1 tablespoon ginger, and the garlic. Cook until fragrant, about 2 minutes. Stir in the chicken broth and sweet potatoes. Cover and cook over medium heat until the potato is tender about 10 minutes. Add the coconut milk and spinach. Simmer, uncovered another 5-10 minutes, until thickened slightly. Slide the meatballs back into the soup. Stir in the cilantro. Season with salt.
    5. Divide the rice among bowls and ladle the soup and meatballs overtop. Drizzle with chili oil. Serve with Naan on the side. Enjoy!

Air Fryer Turkey Breast


So, we bought an air fryer and we are not looking back any time soon.  We've made burgers, fries, vegetables, diced potatoes and now this.  Brian said he'd rather have this turkey in the air fryer on Thanksgiving than the traditional oven-cooked method.  It was really juicy and perfectly crispy on the outside. And, it cooked up super fast.  We served it with cauliflower mashed "potatoes" and it was delicious!

Air Fryer Turkey Breast

  • 4 pound turkey breaston the bone with skin (ribs removed)
  • 1 tablespoon olive oil
  • 2 teaspoons kosher
  • 1/2 tablespoon dry turkey or poultry seasoning

INSTRUCTIONS

  • Rub 1/2 tablespoon of oil all over the turkey breast. Season both sides with salt and turkey seasoning then rub in the remaining half tablespoon of oil over the skin side.
  • Preheat the air fryer 350F and cook skin side down 20 minutes, turn over and cook until the internal temperature is 160F using an instant-read thermometer about 30 to 40 minutes more depending on the size of your breast. Let is rest 10 minutes before carving.

Asian-Style Meatballs with Sweet Chili Sauce

These were SO good and a great switch-up from the normal Asian dinners we make around here.  The flavor was really fantastic and the sauce was super good (although strong, don't overdo it).  We paired it with Mel's coconut rice and some roasted veggies.  Seriously delicious.

MEATBALLS:
  •  2 pounds ground meat (beef, pork, turkey or a combo - see note)
  •  1 cup panko or regular bread crumbs
  •  1/4 cup chopped fresh cilantro
  •  2 green onions, white and green parts finely chopped
  •  2 large eggs
  •  2 tablespoons soy sauce (I use low-sodium)
  •  1 tablespoon finely minced ginger (or ginger paste)
  •  3 cloves garlic, finely minced or 1/2 teaspoon garlic powder
  •  1 teaspoon dried basil
  •  Zest from 1 lime (about a teaspoon)
  •  Pinch of crushed red pepper, more or less to taste (optional)

SAUCE:

  •  1/3 cup soy sauce (I use low-sodium)
  •  1/3 cup sweet chili sauce (see note)
  •  1/4 cup fresh lime juice (from 2-3 limes)
  •  2 tablespoons brown sugar

INSTRUCTIONS

  1. Preheat the oven to 425 degrees F. Line a large, rimmed baking sheet with aluminum foil and lightly spray with cooking spray.
  2. In a large bowl, add the ground meat. Add all the other meatball ingredients and mix until well-combined (I just dig in there with my hands). Roll 2-3 tablespoons of the mixture into meatballs and place 1/2-inch apart or so on the prepared baking sheet.
  3. Bake for 20-25 minutes until cooked through (an instant-read thermometer should read 165 degrees F in the middle of a meatball).
  4. While the meatballs cook, whisk together all the sauce ingredients in a microwave-safe bowl or small saucepan and heat until simmering.
  5. Using tongs or a spatula, remove the meatballs from the baking sheet onto a plate or tray. Drizzle the cooked meatballs with the warm sauce and garnish with additional green onions and toasted sesame seeds, if desired. Serve the meatballs on their own or over brown rice, white rice, quinoa, etc.

How to sub ground turkey for sausage

I know this isn't a typical recipe, but I wanted to keep it here because I know I will use it again and again.  I often find recipes that call for sausage, but I don't love buying it because I think its kind of gross (taking the casings off, etc) and its usually really high in fat.  I made soup tonight that called for sausage and actually couldn't find any at the store, so I googled this recipe and it turned out so delicious, had the same exact flavor as sausage, was more cost effective and better for you!

Ingredients

  • 1 pound ground turkey
  • 1 tablespoon red wine vinegar
  • 1.5 teaspoons Italian seasoning (or equal parts dried basil, oregano, and thyme)
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon packed light brown sugar (optional, but recommended)
  • 1/2 teaspoon paprika
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground or whole fennel seeds

Directions

  1. In a small bowl, combine all spices (including brown sugar, if using) and set a aside.
  2. Brown ground turkey in a large pan on stovetop.
  3. Add red wine vinegar and stir.  Add spice mix and stir to combine.

Mozzarella Stuffed Bruschetta Turkey Burgers with Balsamic Glaze

I know, it's been a while since I posted.  I am on a health kick right now so am trying new recipes.  We had this one tonight and it was so, so good....and easy!  I am not usually a ground turkey kind of girl but these were very flavorful.  We used some bruschetta that I bought at Sam's Club but I am sure this homemade bruschetta is also amazing.

Ingredients (makes 4 burgers)
    For the burgers:
    • 1 lb 99% lean ground turkey breast
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper
    • 1 teaspoon dried basil
    • 1/4 cup shredded parmesan cheese
    • 1 cup mozzarella cheese, divided
    For the Bruschetta:
    • 5 Roma tomatoes, chopped
    • 2 cloves minced garlic
    • 1 Tablespoon extra virgin olive oil
    • 1 Tablespoon balsamic vinegar
    • 1/4 cup fresh basil, sliced
    • Salt & pepper, to taste
    For the balsamic glaze:
    • 1 cup balsamic vinegar
    Instructions
      For the burgers:
      • In a large bowl combine turkey, salt, pepper, basil and parmesan cheese. Divide mixture into 8 portions.
      • Line a peanut butter jar lid with foil, then plastic wrap and press 1 portion of the turkey mixture into the lid. Heap 1/4 cup mozzarella cheese into the middle, then top with another portion of turkey. Press down to seal, then invert the patty onto a plate. Continue until you have 4 burger patties.
      • Grill burgers for 3 to 3 1/2 minutes per side over medium heat.
      For bruschetta mixture:
      • combine all ingredients, and refrigerate for at least 30 minutes. Taste and adjust seasonings accordingly.
      For the balsamic glaze:
      • Heat balsamic vinegar in a sauce pan over medium heat. Let simmer, and stir frequently, until the vinegar has reached the consistency of thin maple syrup.
      • Top grilled burgers with Bruschetta mixture and drizzle with balsamic glaze.

      Mexican Meatloaf

      I knew I'd forget to post Dagmar's recipes every day. :) Here goes another one...enjoy!
      Mexican Meatloaf

      1 1/2 lb. ground turkey
      2 c. salsa
      1/2 can tomato sauce, or diced tomatoes
      1 pack stuffing mix for turkey or chicken
      2 large eggs

      Mix all ingredients together. Divide into a 12-muffin baking pan and bake for 15 minutes at 375 degrees- or until cooked through. Top with cheese or tomato sauce, if desired.

      For the Soup:
      1 1/2 lbs. broccoli, cut into bite-sized pieces
      6 bouillon cubes
      1 quart water
      2 cups milk
      1/3 c. flour
      1 to 1 1/2 cups shredded cheese

      Cook the broccoli in the bouillon and water, stirring occassionally, until tender. Puree in blender with milk and flour (this will guarantee a smooth thickening of the soup). Put back in pan and cook slowly, until thickened. Add cheese until melted.

      For the Paninis: (Makes 4 sandwiches)
      4 slices of your favorite bread (or roll)
      Mustard
      Ranch dressing (light)
      2 slices of cooked, crispy bacon
      8-12 slices of turkey deli
      1 avocado
      Cheese

      Spread a drop of ranch dressing and mustard on one side of bread. Cover with 1/2 slice of bacon. Add 2-3 slices of turkey, 4 thin slices of avocado (@1/4 avocado each), sprinkle cheese on top. Cook in oven at 375 degrees until desired browning occurs and cheese is melted.
