Brown Sugar Peanut Butter Cookies

These are the best peanut butter cookies I've ever had. The dough was so light and fluffy. I thought the maple would be too strong, but you couldn't even taste it. I drizzled the chocolate over the top instead of dipping it because the cookies were sooo soft.

INGREDIENTS

INSTRUCTIONS

  1. 1. Preheat the oven to 350° F. Line a baking sheet with parchment paper.

    2. In a mixing bowl, beat together the butter, brown sugar, and peanut butter until light and fluffy, 3-5 minutes. Beat in the maple syrup, then add the egg and vanilla. Beat until creamy. Add the flour, baking soda, and salt.

    3. Scoop the dough out into rounded 1 tablespoon size balls and then roll through the sugar, the dough will be a little wet. Place 2 inches apart on the prepared baking sheet.

    4. Bake 7 minutes. Remove the pan from the oven and tap the baking sheet on the counter 2 times to flatten them down. Return to the oven and bake another 3 minutes, until the cookies are just beginning to set on the edges, but still doughy in the center. Remove from the oven and tap the baking sheet on the counter 1-2 times to flatten them down again. Let the cookies cool on the baking sheet. They will continue to cook slightly as they sit on the baking sheet.

    5. Drizzle or dip the cookies in chocolate and sprinkle with salt. Eat...or let the chocolate harden and store in an airtight container for up to 4 days.

Chocolate Chip Power Balls


I've made a LOT of protein balls, but these are by far the very best ones I've ever had.  They are so so so good- taste just like cookie dough. :) 

Chocolate Chip Power Balls

  • 2 cups old fashioned oats 
  • 1 cup peanut butter
  • 2/3 cup honey
  • 1/2 cup shredded unsweetened coconut
  • 1/2-1 cup chocolate chips
  • 1 scoop vanilla protein powder (I used Ideal Lean French Vanilla) and 1 scoop Collagen Peptides
  • 1 tsp pure vanilla extract
  • dash of sea salt
We made these with a hand mixer and broke the oats down a little so they were smaller.  Also, the gram measurements for the peanut butter is 266 (for those who have a kitchen scale).  I also used Trader Joe's coconut chips (which are sweetened) and broke those apart as well because they're big.  Biggest problem? Eating just one!

The MOST AMAZING Peanut Butter Cookies

"These cookies are the BEST peanut butter cookies I've ever eaten" said Dad when he first bit into them.  As someone who isn't short on opinions, but will also be totally honest, I'm going to have to agree.  These are absolutely amazing.  Soft and chewy and addictive.  The dough is also incredible so try not to eat it all before you stick it in the oven!

1/2 cup butter, room temperature

1 cup crunchy peanut butter

1 cup dark brown sugar

1 cup sugar

2 eggs

1 teaspoon vanilla

2 cups flour

1 teaspoon salt

2 teaspoons baking soda 


White chocolate chips (optional, but man they really knock these things out of the park)

Cream together the butter and peanut butter. Add sugars and beat until smooth, then beat in eggs one at a time, then vanilla. Sift dry ingredients and slowly add them to the mixture just until incorporated. Add white chocolate chips.

Preheat oven to 350ยบ. Scoop dough (about 2 Tablespoons) onto Silpat or un-greased baking sheet. Make hatch marks by pressing a flour-covered fork down on the down twice - one way, then across the other way (optional- we didn't do this at the Crofts home). Bake for 10 minutes until barely starting to brown, puffed and beginning to crack. Allow to cool on the baking sheet.

Peanut Chicken

This is Dagmar's recipe...she sent me several to post so I'm going to do one each day (if I remember!). She's such a great cook and can throw things together on a whim, so I'm sure these recipes will be keepers. Here's the first one...
Peanut Chicken
Dagmar Jewkes

1/2 cup soy sauce
1/2-1 cup water
Some lemon juice
2-3 Tbs. peanut butter
1 1/2 lbs. chicken, diced
Cooked rice
Broccoli

Let all ingredients (except rice and broccoli) marinate for 1 1/2 hours. Then cook in skillet until chicken is cooked entirely through. Serve with rice and broccoli.

Peanut Butter Bars

Brian's birthday was last week and these delectable treats were his request for a birthday cake. I halved the recipe and it worked perfectly in a 9X13 pan instead of a cookie sheet. They have oatmeal in them, which not only gives the bar a great texture, but makes you feel like it might be slightly healthy for you (don't worry, they're not). Addicting and delicious, these peanut butter bars really deliver.
Peanut Butter Bars

1 cup butter
1 cup granulated sugar
1 cup brown sugar
2/3 c. peanut butter
2 eggs
1 tsp. vanilla
1/2 tsp. salt
2 cups flour
1 tsp. baking soda
2 cups oats

Chocolate Frosting:
3 c. powdered sugar
4 Tbs. butter
4 Tbs. cocoa powder
4 Tbs. milk
1/3 c. peanut butter (or to taste)

Mix butter, sugars, peanut butter, eggs and vanilla. Add salt, flour, baking soda, and oats. Mix well and spread out on a cookie sheet. Bake at 350F for 16-18 minutes. Cool completely and then frost. Enjoy!
