Fiesta Chicken Salad
Fiesta Chicken Salad
3 cups red leaf lettuce
3 cups napa cabbage
1 cup cooked, diced chicken
2 plum tomatoes, chopped
1/2 red bell pepper
1/2 yellow bell pepper
1/3 cup tortilla chips, crushed
1/4 cup corn (fresh)
pumpin seeds, toasted (or pepitas)
1/2 red onion, thinly sliced
1/2 cup Cojita cheese, crumbled
Mix together and add dressing (below).
Cilantro Lime Dressing:
1/2 cup chopped scallions
1/4 cup fresh lime juice (2 limes)
1/4 cup fresh cilantro
1 Tbs minced garlic
1/2 cup oil
Blend.
